Paicines Cabernet Sauvignon 2020
Sourced from Pedregal de Paicines Vineyard in the small town of Paicines. This wine was crushed into open top fermenters and was fermented at high temperature to maximize extraction. Extraction was further enhanced with 24 days of warm extended maceration on fermented skins. After 24 days the free run wine was drawn off into settling tanks and the press wine was seperated. Both free run and press wine were then racked to barrel and aged for 18 months before the final belnd was made. Barrel selection included 40% new American oak and 10% new French Oak. Best enjoyed from 2023-2035.
